Paraguay, a landlocked country in South America, is known for its rich cultural heritage and diverse cuisine. Influenced by the native Guarani people, as well as Spanish, Italian, and German settlers, Paraguayan cuisine offers a unique blend of flavours and ingredients. Through making a family dinner inspired by this country we explored two traditional Paraguayan dishes: Tallarín Paraguayo and Chipa Guazu.

Tallarín Paraguayo

Tallarín Paraguayo is a popular Paraguayan pasta dish that showcases the Italian influence on the country's cuisine. The dish features homemade pasta noodles, typically made from scratch using flour, eggs, and water. The noodles are then cooked until al dente and served with a flavourful sauce. To prepare Tallarín Paraguayo, start by making the pasta dough. Combine flour, eggs, and water in a mixing bowl, and knead the mixture until it forms a smooth and elastic dough. Allow the dough to rest for a while before rolling it out into thin sheets. Cut the sheets into long, thin noodles. Next, prepare the sauce. In a pan, heat olive oil and sauté diced onions and garlic until they turn golden brown. Add diced tomatoes, tomato paste, and your choice of herbs and spices such as oregano, basil, and paprika. Simmer the sauce until it thickens and the flavours meld together. Cook the pasta noodles in a pot of boiling salted water until they are cooked to your desired consistency. Drain the noodles and toss them in the prepared sauce. Serve the Tallarín Paraguayo hot, garnished with grated cheese and chopped parsley.

Chipa Guazu

Chipa Guazu is a traditional Paraguayan cornbread that is often enjoyed as a side dish or a main course. This dish highlights the indigenous Guarani influence on Paraguayan cuisine, as it incorporates corn, a staple crop in the region. To make Chipa Guazu, start by blending fresh or frozen corn kernels in a food processor until they become a coarse paste. In a mixing bowl, combine the corn paste with grated cheese, diced onions, eggs, milk, melted butter, and salt. Mix well until all the ingredients are thoroughly combined. Grease a baking dish and pour the corn mixture into it. Bake in a preheated oven at 350°F (175°C) for about 45 minutes to an hour, or until the top turns golden brown and the centre is set. Once cooked, allow the Chipa Guazu to cool slightly before slicing and serving. This savoury cornbread pairs well with grilled meats, stews, or can be enjoyed on its own as a delicious snack.
