The experience of preparing this legitimate dish brought our family closer together as we shared tasks, recipes, and stories surrounding its significance.

To begin with, we gathered our ingredients: 1 kg of lamb shoulder, 1 L of plain yogurt, 3 eggs, 1 cup of rice, a few cloves of garlic, and seasoning such as salt and pepper. Each ingredient plays a crucial role in achieving the authentic flavour of Tavë Kosi. To start preparing, we cut the lamb into bite-sized pieces and seasoned it generously with salt and pepper. After browning the lamb in a large pan, we added minced garlic, allowing its aroma to infuse through the meat.

Once the lamb was browned, we mixed the rice with the meat, ensuring every grain absorbed the savory flavour. Subsequently, we blended the yogurt and eggs in a bowl until smooth to create the creamy topping essential for Tavë Kosi. We then poured this mixture over the meat and rice combination, transferring everything into a greased baking dish.

For the baking process, we preheated the oven to 180 degrees Celsius and allowed the dish to bake for approximately one hour until the top turned a lovely golden brown. As the dish cooked, the warm, inviting aroma filled our home, reinforcing the connection to Albanian tradition.
