Peruvian Cuisine: A Fusion of Flavours

Peruvian cuisine is a vibrant and diverse culinary tradition that reflects the country's rich history and cultural influences. Located on the western side of South America, Peru shares borders with Colombia, Brazil, Bolivia, and Chile. This geographical position has played a significant role in shaping Peru's culinary heritage.

A Melting Pot of Influences

Peruvian cuisine is a fascinating blend of indigenous ingredients and flavours, as well as the culinary traditions brought by various immigrant communities. The Inca civilization, with its abundance of natural resources, laid the foundation for the country's unique gastronomy. The Inca people cultivated a wide variety of crops, including potatoes, corn, quinoa, and aji peppers, which are still staples in Peruvian cooking today. Over the centuries, Peru has seen waves of migration from different parts of the world, resulting in a fusion of culinary traditions. Spanish colonizers introduced ingredients like wheat, rice, and various spices, while African slaves brought their cooking techniques and flavours. Chinese and Japanese immigrants made their mark on Peruvian cuisine with their own culinary contributions.

A Taste of Peru: Lomo Saltado

For our Peru-inspired family dinner, we decided to prepare a classic Peruvian dish called Lomo Saltado. This flavourful and hearty stir-fry is a perfect example of the fusion of flavours that defines Peruvian cuisine. Lomo Saltado combines marinated strips of beef, onions, tomatoes, and aji peppers, stir-fried in a hot skillet. The dish is typically served over a bed of white rice and accompanied by French fries. This unique combination of ingredients reflects the influence of both Chinese and Spanish cuisine in Peru. To make Lomo Saltado, start by marinating the beef in a mixture of soy sauce, vinegar, garlic, cumin, and oregano. While the beef marinates, prepare the vegetables by slicing onions, tomatoes, and aji peppers. Heat a skillet or wok with oil and stir-fry the beef until it's cooked to your desired level of doneness. Then, add the onions, tomatoes, and aji peppers, and continue cooking until the vegetables are tender. Serve the Lomo Saltado over a bed of fluffy white rice and garnish with fresh cilantro or parsley.
