Are you looking to add some exotic flavours to your family dinner? Why not take inspiration from the vibrant country of Morocco? Located in North Africa, Morocco is a melting pot of cultures and cuisines, influenced by Berber, Arab, Spanish, and Mediterranean flavours.

Situated between Spain, Algeria, and the disputed territory of Western Sahara, Morocco boasts stunning coastlines along the Atlantic Ocean and the Mediterranean Sea. Its rich history and diverse cultural influences can be seen in its vibrant architecture, colourful markets, and, of course, its delicious food.

If you've never cooked with a tagine before, you're in for a treat. A tagine is a traditional Moroccan cooking vessel with a cone-shaped lid, which helps to trap and circulate steam, resulting in tender and flavourful dishes. It's perfect for slow-cooking meats and vegetables, allowing the flavours to meld together beautifully.

One of the highlights of Moroccan cuisine is the use of aromatic spices. For our chicken, chickpea, and vegetable tagine, we used a variety of spices such as coriander, turmeric, cumin, ginger, paprika, pepper, cinnamon, allspice and cloves. These spices added depth and warmth to the dish without being 'hot and spicy'.

To balance out the savoury flavours, we added dried dates and apricots to our tagine. These natural sweeteners added a delightful sweetness and a hint of tanginess to the dish, creating a perfect harmony of flavours.

For a refreshing accompaniment, we prepared a yogurt sauce using mint, parsley, and a touch of cinnamon. This cooling sauce not only complemented the spices in the tagine but also added a refreshing element to the meal.

To complete our Moroccan-inspired family dinner, we served the tagine with fluffy rice. The combination of tender chicken, hearty chickpeas, and flavourful vegetables will make this dish a satisfying and nutritious meal for the whole family.
