Influenced by traditional African cuisine and spices introduced by Arabian travellers, Nigerien food offers a unique blend of flavours and ingredients. In this blog post, we will take you on a culinary journey to Niger and share our experience of preparing and enjoying a family dinner inspired by this fascinating country.

Exploring Nigerien Cuisine

Nigerien cuisine is characterized by its simplicity and the use of locally sourced ingredients. The country's cuisine is heavily influenced by its neighbouring countries, such as Nigeria, Mali, and Burkina Faso. The National Dish: Djerma Stew

For our family dinner, we decided to prepare the national dish of Niger, Djerma Stew. This flavourful stew is a staple in Nigerien households and is typically made with a combination of meat, vegetables, and spices. It is often served with rice or millet couscous.

To make Djerma Stew, we gathered the following ingredients:

  • 500 Chicken, cubed

  • 1 onion, finely chopped

  • 2 cloves of garlic, minced

  • 2 tomatoes, diced

  • 2 carrots, sliced

  • 2 potatoes, diced

  • 1 capsicum, diced

  • 1 teaspoon of ground ginger

  • 1 teaspoon of ground paprika

  • 1 teaspoon of ground cumin

  • Salt and pepper to taste

  • 4 cups of chicken or vegetable broth

First, we browned the chicken in a large pot over medium heat. Once the chicken was browned, we added the onions and garlic, sautéing them until they were soft and fragrant. Next, we added the tomatoes, carrots, potatoes, and capsicum, stirring them into the mixture.

After that, we sprinkled the ginger, paprika, cumin, salt, and pepper over the vegetables and chicken. We poured in the broth, making sure it covered all the ingredients. Then, we brought the stew to a boil, reduced the heat to low, and let it simmer for about an hour, until the flavours melded together and the vegetables were tender.

Serving and Enjoying
