A Taste of Nigeria: Exploring the Flavours of West Africa

Located on the Gulf of Guinea in West Africa, Nigeria is a country rich in cultural diversity and culinary heritage. With its borders touching Benin, Niger, Chad, and Cameroon, Nigeria has been influenced by the hundreds of native African ethnic groups that call this vibrant nation home.

One of the best ways to experience the essence of Nigeria is through its food. Nigerian cuisine is known for its bold flavours, vibrant colours, and unique combinations of spices and ingredients. For a memorable family dinner inspired by Nigeria, we decided to prepare a traditional Nigerian dish called Suya.

Suya is a popular street food in Nigeria that consists of skewered meat, typically beef, chicken, or goat, marinated in a flavourful blend of spices and then grilled over an open flame. The marinade for Suya typically includes a mixture of ground peanuts, ginger, garlic, onion powder, paprika, cayenne pepper, and other spices, giving it a rich and aromatic taste.

To recreate the authentic flavours of Suya, we marinated our choice of meat in a homemade spice blend. We combined ground peanuts, ginger, garlic powder, onion powder, paprika, cayenne pepper, salt, and a touch of oil to create a thick and fragrant paste. After allowing the meat to absorb the flavours for a few hours, we threaded it onto skewers and cooked it on the BBQ, just like it would be done on the streets of Nigeria.

The result was a succulent and flavourful dish that captured the essence of Nigerian cuisine. The combination of the smoky char from the grill and the bold flavours of the marinade created a taste sensation that delighted our taste buds.

While Suya was the star of our Nigerian-inspired family dinner, we also incorporated other traditional Nigerian flavours into our meal. We served the Suya with a side of jollof rice, a popular Nigerian rice dish cooked with tomatoes, onions, and a blend of spices.
